Mashed Sweet Potatoes
Thanksgiving is fast approaching! Rather than endure that calorie-laden, marshmallow infested sweet potato casserole (that's really more like a dessert than a side dish), why not try something quick and healthy? Our mashed sweet potato recipe has just 3 ingredients, but you can add chopped pecans or walnuts if you like. It's extremely high in beta-carotene and potassium and contains zero fat, unless you add some nuts. Bon appétit!
Ingredients:
4 large sweet potatoes, peeled and cubed
3/4 cup orange juice
1/4 tsp. cinnamon
Preparation:
1. Boil the potatoes until soft.
2. Drain the water.
3. Add orange juice and cinnamon
4. Beat with a hand mixer on high until completely mashed.
5. Add 1/4 cup chopped walnuts or pecans if desired. *
Makes 8 (1/2 cup) servings
