Southwest Wraps

September signals the end of summer and the start of school and schedules. It also brings lunch time decisions – buy or pack? With rising prices and fewer healthy choices more and more people are packing lunches for their kids and themselves. Try our tasty Southwest Wraps in your or your child's next lunch for a fun new twist on the turkey sandwich.

Ingredients:
1/2 lb Deli Southwestern Turkey or Buffalo Chicken
*5 whole wheat tortillas, 6"-7" diameter
4 ounces reduced fat cream cheese, softened
1/2 cup low fat mayonnaise
1/2 teaspoon chili powder
1/2 package of fresh spinach
4 ounces shredded cheddar or taco cheese

Preparation:
Blend together cream cheese, mayonnaise and chili powder. Spread 1 – 1 1/2 tablespoons of the cream cheese mixture over each tortilla. Evenly layer each tortilla with spinach leaves, sliced turkey or chicken and shredded cheese. Tightly roll up each tortilla and cover with plastic wrap or place it in a plastic bag. Refrigerate or keep in an insulated lunch box until ready to eat.

Makes 5 servings

*For a tasty appetizer, use 10" tortillas, double the filling recipe and slice each wrap into 8 pieces after refrigerating for at least 2 hours.
