Nutritious Nibbles
In honor of National Nutrition Month and because spring is just around the corner (we hope!) here is a great salad recipe.
Pear, Feta and Basil Salad
3 ripe pears (peeled if desired)
1 cup fresh basil leaves, torn
6 ounces feta, crumbled
1/2 cup toasted pecans
1/4 cup extra-virgin olive oil
4 teaspoon balsamic vinegar
fresh ground black pepper
6 cups mixed salad greens
Preparation
Cut each pear into 6 to 8 wedges, and then cut in half. Combine the pears with basil, feta and pecans, add to salad greens. Combine oil, vinegar and ground pepper, shake to blend. Drizzle oil and vinegar over the salad or serve on the side.
Options
Use fat free or low fat feta cheese to reduce calories, fat and cholesterol
Use any kind of toasted nuts or seeds
Makes 6 - 1 cup servings
