Nutritious Nibbles

How about a recipe that can satisfy your sweet tooth, is fun to eat and provides good things for your body? Oven-fried sweet potatoes can be served as a side dish with any meal or it can be a fun finger food. Sweet potatoes give you a kick of vitamins A and C, plus their rich orange color provides cancer-fighting antioxidants. Who would have thought eating your veggies could be so much fun!

Oven-Fried Sweet Potatoes
4 medium sweet potatoes, peeled and cut into 1/4-inch slices (about 1 1/2 pounds)
1-2 tablespoons olive oil
1/4 teaspoon kosher or sea salt
1/4 teaspoon pepper
Vegetable cooking spray

Preparation
Combine the first 4 ingredients in a large bowl; toss gently to coat. Arrange sweet potato slices in a single layer on a large baking sheet coated with cooking spray. Bake at 400° for 30 minutes or until tender, turning the potato slices after 15 minutes.

Optional Toppings
Butter flavored sprinkles or buttery flavored spray
Favorite seasoning or spices (be adventurous)
Chopped fresh parsley
Grated orange or lemon rind, ginger
Maple syrup for dipping
