Bite This, Not That

There's a new grain in town, and it ain't brown rice! Sure, brown rice is nice. It's a whole grain, so it has more fiber than white rice. But there's a better grain to try in your next salad or bean dish.

Quinoa (pronounced KEEN WAH) is a high fiber, high protein grain boasting 22 grams of protein and all the essential amino acids we need to function. It just so happens to be high in fiber and iron, but lower in fat than meat or soy. In addition, it's not a flavor bully, so it can be added to soups and stews or your favorite chili. It's a great substitute for pasta and cooks faster than rice.

Raw quinoa can be found in the rice section of your favorite grocery store. To cook it, rinse it until the water runs clear. Combine 1 part dried quinoa to 2 parts water or chicken broth and simmer for about 15 minutes. Once all the liquid is absorbed, it's done! Like rice, quinoa plumps when you cook it- about four times its original size. Serve it with black beans for an easy Mexican dish, or add some steamed vegetables and olive oil for quinoa primavera.
